In a Pickle - Homemade Pickles
I got into a Pickle, I wanted to share a Recipe on here that I've adapted, though I couldn't get ahold of the franchise that invented it as they aren't contactable: hoxton Beach Turnip Pickles (that go into their famous Falafel Wrap), tho I thought that I would anyway...I had to because they are soo good.
Makes 1 small Jar Pickles
Two Turnips
Four Table Spoons Apple Cider Vinegar
1/4 Tea Spoon Sea Salt
1/2 Tea Spoon Dill (Fresh or dried Dill Weed)
1 clove Garlic
For Colour, the liquid off one Packet of already cooked Beetroot or homecooked from fresh if you have them.
The rest of the jar you top up with Water
Directions: Dissolve the Sea Salt in a little boiled water, chop the Turnip into fine strips about 2cm by 2mm add the Apple Cider Vinegar to the Sea Salt solution once it's cooled and then the rest of the ingredients, layering the Garlic with the Turnips. You can add the dill at the end making sure to stir in carefully. Make sure the Turnips are topped up with water just above the surface, so that the jar is full. Keep in a place in your kitchen where they can be easily ckecked - may require a green edible leaf on top to keep the pickles submerged in their brine (I used a Shiso leaf for my batch of Turnip pickles this time. Ready in a week or when they start to taste done, then refrigerate.
Other pickles I made are variations of the recipe above, or sometimes the quickest pickle to make (ready the same day) is below, Ume Su Radish. The great thing about Pickles is that they last and last and last. My favorite has got to be my Dad's Green Onion Chutney which we have had him make a load that's lasted three Festive Season's in a row and it's still good!
Other Pickles that I have going in the kitchen are, Ginger/Rice Syrup, Gobo Root/Hishio (Shoyu paste), Carrot Celery/Lemon Shoyu and the most basic Daikon.
One of the most easy ways of preserving food is Pickling and that is the art of fermentation. My sister who is away for Half Term with her family is a big Big Pickle fan. I can just hear her saying on her return: "It's so great to have Pickles".
