Faithful Friands
I tend to make this recipe quite a lot as they are delicious and make good gifts. Firstly, for this batch I used whole Almonds and ground them in a Spice Mill (or electric coffee grinder)- So, it came out looking quite brown from all the Almond skins. For the Method see below:
Ingredients:
Dry:
3 Cups White Spelt Flour (or Gluten Free equivalent)
2 Cups Ground Almonds
1/4 Teaspoon of Pink Himalayan Salt (or Sea Salt)
2 Teaspoons of Baking Powder
Wet:
1/2 Cup of Olive Oil* (Coconut or other Oil suitable for baking could work)
1 Cup Apple or Pear Puree
1/2 Cup Soy Milk (↓↑)
1/2 Cup Coconut Milk from Can (↓↑)
1 Cup Rice Syrup (by Biona is best as it's the most light)
(you could also use Agave Syrup if you were that way inclined)
Coconut Oil for Greasing Muffin Trays.
Garnish:
Fresh Raspberries
St. Dalfour Raspberry Jam (or Strawberry will do though not as Concentratedly Sweet)
Method:
Prepare the Raspberries before hand by checking they are washed and Bug free!
Set Oven to Gas mark 6 (around 400°C), Grease Muffin Trays
- Mix Flours, Salt and Baking Powder together, Rub between hands to prevent clumps from building up.
- Blend in a separate Mixing Bowel the Oil (Coconut you'd have to submerge Jar in high temperature water in order for it to melt), apple Puree and Coconut Milk - if using and Rice Syrup..add the Soymilk last once the other Ingredients are blended together.
- Gently fold the Wet into the Dry with a Spatula being careful not to overmix.
- Use Mixing Spoon to pour batter out of Mixing Bowl and into Muffin Moulds
- Use your Sugarfree Jam (Preferably Organic if you can find it) and scoop a tiny quarter teaspoon out of Jam Jar and place in the Middle of Muffin.
- Get your Raspberries and Poke in the Middle.
*(preferably made from hand harvested Olives, such as the Clearspring one obtained directly from olives and solely by mechanical means), some Olives for Olive Oils are harvested at night (when the fruit is at it's peak and less astringent) and tiny birds are sucked into the hoover like mechanism that gathers them- rather than the more traditional method of picking with a hand combing contraption by a human.
